Snicker Doodle Banana Bread
My son-in-law had 1 request for his birthday; he asked if I could make this for him. I had never heard of Snicker Doodle Banana Bread, but I was up for trying it! And wow, it was so good. Just another twist of an option for those ripe bananas on the hook in your kitchen!
Ingredients
3/4 cup sugar
3 ripe bananas, mashed
1/2 cup butter, melted & cooled slightly
2 eggs, room temperature
1/2 cup greek yogurt
2 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
Topping
½ cup sugar
2 tsp cinnamon
Instructions
1. Preheat oven to 350º
2. Grease or spray a loaf pan
3. In a large bowl, whisk together mashed bananas with melted butter
4. Whisk in ¾ cup sugar, eggs, greek yogurt, and vanilla
5. In a separate bowl, combine the flour, baking soda, salt and cinnamon
6. Fold the dry ingredients into the wet
7. Combine ½ cup sugar with 2 tsp cinnamon
8. Sprinkle a few TBLS of the cinnamon sugar mixture around the inside of the loaf pan, coating it as best as possible
9. Pour half of the batter into the prepared loaf pan
10. Sprinkle half of the remaining cinnamon sugar mixture over the batter
11. Pour the rest of the batter on top and repeat with remaining cinnamon sugar
12. Bake for 60 minutes, or until a knife inserted in the center comes out clean
13. Allow to cool for 15 minutes before removing from pan
