In January, my wife took up a challenge with our church to try a 21 day Daniel Fast. The Daniel Fast or Daniel Diet is based upon the prophet Daniel’s dietary and spiritual experiences as recorded in the Book of Daniel in the Bible. It’s a partial fast that focuses very heavily on vegetables and other healthy whole foods, but leaves out any animal sources of protein.

My eyes were opened as I tried many “new” options. One of those options is the source of this week’s “Cookin’ With Brook” recipe. The official title is “Black Bean Hummus”. I call it, “That Healthy Black Bean Dip”. (Thanks Gerrit’s Appliance)

Ingredients:

1 Can of black beans drained (don’t throw away the bean juice)

2 Tablespoons fresh lemon juice

1-2 Tablespoons tahini

1 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon cayenne pepper

Garlic (recipe calls for 1 clove, but I’m not a garlic fan, so we use a few squirts of the Garlic in a bottle for a hint of the the taste)

Optional: Lawry’s Casero Chili Lime Seasoning

Directions:

  1. Add black beans, lemon juice, tahini, cumin, salt and cayenne pepper, garlic (and Chili lime seasoning); process until smooth
  2. Add enough of the reserve bean juice (1 tablespoon at a time) to reach the desired consistency; pulsing after each addition.
  3. Serve with tortillas, crackers or veggies
