Simple Pineapple Muffins

Got this recipe from Kristi on Facebook and it sounded so good and easy, I had to try it. And it was! So I’m passing it along here. Tastes very light and springy!


  • 2 Cups Baking Mix (like Jiffy or Bisquick)
  • 2/3 Cup Sugar
  • 1 Egg
  • 3/4 Cup Milk
  • 8oz Can Crushed Pineapple (and the juice)


  • Pre-heat oven to 400
  • Spray or line muffin tin
  • Mix all ingredients together until well-blended
  • Bake 18-20 minutes or until toothpick comes out clean
