Got this recipe from Kristi on Facebook and it sounded so good and easy, I had to try it. And it was! So I’m passing it along here. Tastes very light and springy!
- 2 Cups Baking Mix (like Jiffy or Bisquick)
- 2/3 Cup Sugar
- 1 Egg
- 3/4 Cup Milk
- 8oz Can Crushed Pineapple (and the juice)
- Pre-heat oven to 400
- Spray or line muffin tin
- Mix all ingredients together until well-blended
- Bake 18-20 minutes or until toothpick comes out clean
